Blueberry Oat Bars

- 100 g muscovado sugar
- 4 tablespoons golden syrup
- 1 teaspoon vanilla extract
- 125 g butter
- 250 g rolled oats
- 2 tablespoons Organic Wild Blueberry Powder
- 30 g Dried Organic Wild Blueberries

- Put the muscovado sugar, golden syrup, vanilla extract and butter in a large bowl and melt in the microwave. This should take about 2 minutes until fully melted.
- Place the rolled oats in another bowl and pour the melted butter and sugar mixture over them. Mix well to combine.
- Add 2 tablespoons of Harctic Organic Wild Blueberry Powder and the Dried Organic Wild Blueberries to the mixture and mix well to combine.
- Line a square baking pan with baking paper and then spread the oat-blueberry mixture evenly over the base of the pan. Press down firmly.
- Bake at 180 degrees Celsius for 35 minutes, until the top is golden.
- Remove from the oven and allow to cool. The oat bars will firm up as they cool, so cut into nine pieces while warm. Leave them to cool in the tray, and then remove and separate once fully cooled.
